The 2021 Providore Rosé takes its inspiration from the south of France. Subtle onion skin in colour with delicate fresh stone fruit aromas. This delicacy continues through to the palate with just a hint of red fruit carried along by the juicy stone fruit flavours. The fruit weight is elegant, but the textural elements add weight and richness. A beautifully balanced Rosé showing the elegance and poise that is possible when the winemaker exercises some restraint. Serve chilled on a summers day or try next to the fire on a winters evening that needs a little summer sunshine.
The fruit (100% Pinot Noir) was hand harvested then destemmed and left for 2 hours skin contact before being pressed to tank for cold settling. The resulting juices were then racked and inoculated with selected wine yeast. The fermentation was stopped retaining a touch of residual sugar.
Incredibly versatile with food, our Rosé pairs well with lighter meats such as ham off the bone and lamb. It’s a great match with a charcuterie platter and compliments the many ways you can choose to serve salmon.
